The vineyard

In the heart of the Chablais region (canton de Vaud)

Bernard Cavé currently owns 3.5 hectares of vineyards on the slopes of Verschiez and Antagnes. He also purchases grapes from Coteau de Verschiez (3.5 hectares) and Ollon (1 hectare). Chasselas makes up 60% of his production. He also produces Chardonnay, Savagnin Blanc, Gamay, Pinot Noir, Gamaret, and Syrah. He continues to vinify the 20 hectares of the Domaine de la Pierre-Latine, which his friend Philippe Gex sold to the Hoffmann family in 2017 and which includes the Clos du Crosex Grillé, a 2.5-hectare south-facing amphitheater between Yvorne and Aigle. From this vineyard, he produces an exceptional terroir Chasselas, selected by the association Mémoire des vins suisses.

Bernard Cavé vinifies his different cuvées in Aigle, in the cellar of the Domaine de la Pierre-Latine. Since the 2009 vintage, he has been aging some of his wines in concrete amphorae. This container has become one of his trademarks: he uses it for several of his whites wines, including the Chasselas Coteau de Verschiez and Clos du Crosex-Grillé. "Concrete amphorae allow us to emphasize the expression of the terroir," says the master winemaker. "On the Coteau de Verschiez, there is a vein of gypsum that gives a light, silky, and chalky aspect to the wine."

The nerve center of the estate with the reception, catering services, office and stock is located in Ollon, En Chatoney. Tucked away from the village, it is the ideal place to organize an event with family, friends, or colleagues.
