Expressive nose, with floral aromas and a delicate chalky note. The palate is refined and dynamic, with a bit more structure than its counterpart aged 50% in stainless steel tanks. Saline finish.

Gamay

Charming nose, with notes of blackberry, black cherry, and white pepper. The palate is lively and dynamic, featuring luscious fruit (blackcurrant) and fine, dense tannins. Finish lingers with hints of graphite.

VDP Suisse

Nose of violet and black cherry, reminiscent of syrah. The palate is juicy, indulgent, with structure and ripe tannins. A wine of balance, finishing with notes of dark fruits.

Bernard Cavé Vins

Born in Ollon, Bernard Cavé knew from an early age that he would become a winemaker. "I was born amidst the vineyards," he recalls. "My father owned a 500 m2 plot of Chasselas, and we would harvest together. Those are very fond memories." The turning point came during his first visit to the Ollon cooperative, where his father delivered grapes. "I was 14 years old; I remember it as if it were yesterday. I told myself: I want to make wine."
